Good friends Kim & Lylette Russell of Crayfish Bay Cocoa Estate are the true definition of single estate 'tree-to-bar' chocolate. Kim literally built their chocolate factory by hand, even designing his own charcoal roaster to roast the cocoa beans. No temperature gages here, he judges a roast through smell and sound.
Their foundations are rooted in stark honesty and collaboration, everyone involved is compensated their rightful share. Having handed over control of his land to local people, they look after the land and receive 90% of the highest current price available for all the wet cocoa and green nutmeg they pick.
They are the gold standard in cocoa picking & processing, having spent years perfecting their fermentation & drying technique, each ferment's acid levels carefully monitored to maximise the resulting flavour in their chocolate.
